100% Whole Wheat Sandwich Bread

I haven't made bread at home in a while.  However, having recently started a savory brioche at work along with making cinnamon rolls and sticky buns for brunch, I've had the urge to get back into it at home.

I've had Peter Reinhart's Whole Grain Breads on my bookshelf for a while, and even though I've read through it, I hadn't made anything out of it.  Yesterday, I pulled it off the shelf and started with the 100% whole wheat sandwich bread, basically a primer in his new mixing method for working with whole grains in bread.  Though seemingly complex, the method is actually really easy and turned out to be less work than just regular bread.  What it yielded was an absolutely delicious loaf of beautifully soft, sweet and nutty whole wheat bread (and to be honest, my whole wheat flour wasn't even that fresh, so I can imagine it would be even better with fresher flour).
